Man kann bei der Wahl des Parmesans sehr viel \u201efalsch\u201c machen und mit den Jahren soll er immer besser werden. Der richtige und echte Parmigiano\u00a0Reggiano muss mindestens 12 Monate gereift sein, ist im Handel aber meistens mit 24 Monaten erh\u00e4ltlich. Den Echten erkennt man \u00fcbrigens an der Pr\u00e4gung auf der Rinde.<!--more--><\/p>\n<p>Beim Koch-Workshop letzte Woche im Restaurant <a href=\"http:\/\/restaurantlechef.ch\/\" target=\"_blank\">Le Chef<\/a> von Meta Hiltebrand, durften wir uns nicht nur kulinarisch verw\u00f6hnen lassen, sondern haben auch fleissig (oder weniger fleissig \ud83d\ude09 ) mit angepackt. Nach dem Parmesan-Tasting von 24 Monate altem bis hin zu 48 Monate altem Parmesan, wurden die Kochsch\u00fcrzen umgelegt\u00a0und die anwesenden Food-Blogger und Journis in Teams aufgeteilt. Wir (meine bessere H\u00e4lfte und ich) haben uns f\u00fcr das Hauptgang-Team mit Chefkoch Tinu\u00a0entschlossen.<\/p>\n<p>Das Menu, vollends abgestimmt auf den Parmigiano Reggiano liest sich wie ein Gedicht, wie ich finde. Folgendes haben wir in den Teams mit tatkr\u00e4ftiger Unterst\u00fctzung der Profis zubereitet:<\/p>\n<ul>\n<li>K\u00fcrbis-Panna Cotta im Parmigiano Reggiano Spinatpulvermantel mit einem Artischockensalat auf einem Carpaccio vom ger\u00e4uchertem Schwertfisch an Waldbeeren-Balsamico-Reduktion<\/li>\n<li>Lollis vom Parmigiano Reggiano mit getrockneten Himbeeren und Crevetten. Dazu eine gebackene Tomatensuppe im Glas<\/li>\n<li>Duett vom Rind im Parmigiano Reggiano Knuspermantel und Hirschrack im Pfeffer-Kr\u00e4utermantel auf einem Feigenrisotto an einem Lakritze-Portweinjus<\/li>\n<li>Parmigiano Reggiano M\u00f6ckli auf dem heissen Stein mit Tr\u00fcffelhonig und karamelisierten K\u00fcrbiskernen<\/li>\n<\/ul>\n<p>Mein Favorit? Das Dessert, die M\u00f6ckli auf dem heissen Stein\u2026 man war das Foodporn Deluxe zum reinlegen. Aber auch unser Hauptgang mit de Lakritze-Portweinjus war delici\u00f6\u00f6\u00f6\u00f6s. Auch wenn ich sonst kein Lakritze-Fan bin.<\/p>\n<p>Danke an die Damen von Parmigiano Reggiano, welche zusammen mit Meta diesen tollen Abend auf die Beine gestellt haben.
