Das ist ja so ne richtige englische Speise, wenn ich mich nicht t\u00e4usche. Heute habe ich aber die Deluxe Version des Bread Puddings f\u00fcr euch und zwar mit Butter-Croissants und selbstgemachtem Caramel, leckerst! Auch wenn ich danach immer nach etwas Salzigem lechze und \u00fcber die Kalorien m\u00f6chte ich mir gar nicht erst Gedanken machen, die sind eh over the top. Aber man g\u00f6nnt sich sowas ja auch nicht jede Woche. Das <a href=\"http:\/\/www.nigella.com\/recipes\/view\/caramel-croissant-pudding-38\" target=\"_blank\">Rezept stammt \u00fcbrigens von meiner Lieblings-TV-K\u00f6chin Nigella Lawson<\/a>.<!--more--><\/p>\n<p><strong>Zutaten f\u00fcr ca. 2-3 grosse Portionen:<\/strong><\/p>\n<ul>\n<li>4 Croissants (am besten vom Vortag als Resteverwertung)<\/li>\n<li>200 gr. Zucker<\/li>\n<li>4 EL Wasser<\/li>\n<li>250 ml Rahm<\/li>\n<li>250 ml Milch<\/li>\n<li>4 grosse Eier<\/li>\n<\/ul>\n<p><strong>Zubereitung:<\/strong><\/p>\n<p>1. Eine kleine Gratinform bereitstellen, die Croissants in kleine St\u00fccke zupfen und in die Form geben. Den Ofen auf 180 Grad vorheitzen.<\/p>\n<p>2. Als erstes geht es an den Caramel. Die 4 EL Wasser in eine Pfanne geben (ich habe die Bratpfanne genommen) und den Zucker hinzugeben. Nun das Ganze etwas schwenken, bis sich der Zucker mit dem Wasser vermischt und sich beginnt aufzul\u00f6sen.<\/p>\n<p>3. Jetzt auf mittlere bis hohe Hitze stellen und den Zucker zu Caramel werden lassen, das dauerte bei mir ca. 7 Minuten (gem\u00e4ss Nigella 3-5 Min). Zwischendurch nicht r\u00fchren sondern nur schwenken. Behaltet die Pfanne unbedingt im Auge, es kann am Schluss sehr schnell gehen. Der Zucker sollte richtig sch\u00f6n braun werden, halt eben caramellig, dann ist er perfekt.<\/p>\n<p>4. Nun langsam den Rahm hinzugeben und gleichzeitig mit einem Schwingebesen schnell r\u00fchren. Ignoriert die Kl\u00fcmpchenbildung, wenn etwas Kaltes auf den heissen Caramel trifft, erstarrt dieser nat\u00fcrlich.<\/p>\n<p>5. Die Milch hinzuf\u00fcgen und nun nochmals alles fleissig r\u00fchren und weiterk\u00f6cheln lassen, bis sich die erstarrten Caramel-Klumpen wieder auf l\u00f6sen.<\/p>\n<p>6. Die Pfanne von der Herdplatte nehmen und die bereits aufgeschlagenen Eier hinzuf\u00fcgen und unterr\u00fchren.<\/p>\n<p>7. Nun die Masse in die Gratinform \u00fcber die Croissants geben und warten bis diese die Fl\u00fcssigkeit etwas aufgesogen haben.<\/p>\n<p>8. Bei 180 Grad in der Ofenmitte f\u00fcr 20 Minuten backen.
