Desserts ausprobieren. Das Rezept zum Ovomaltinen-Mousse mit Salzstangenkrokant habe ich noch vor Weihnachten bei <a href=\"http:\/\/la-petite-cuisine.blogspot.ch\/2012\/12\/oh-tannenbaum-ein-paar-gedanken-zum.html\" target=\"_blank\">la petite cuisine<\/a> dentdeckt und es mir gleich f\u00fcr sp\u00e4ter abgespeichert. Das Rezept ist so einfach, wie es sich anh\u00f6rt und wenn man die Kombi salzig-s\u00fcss mag, wie ich, hat es das gewisse Extra mit dem Salzstangenkrokant. Nat\u00fcrlich kann man diesen auch weglassen, wenn es etwas zu experimentierfreudig scheint.<!--more--><\/p>\n<p><strong>Was ihr f\u00fcr 4 kleine Portionen ben\u00f6tigt:<\/strong><\/p>\n<ul>\n<li>150 gr. Ovomaltinen Schokolade<\/li>\n<li>3 Eiweisse, steif geschlagen<\/li>\n<li>1 dl Halbrahm, steif geschlagen<\/li>\n<li>50 gr. Salzstangen, klein gehackt<\/li>\n<li>etwas Butter<\/li>\n<li>1 TL Puderzucker<\/li>\n<\/ul>\n<p><strong>Zubereitung:<\/strong><\/p>\n<p>1. Die Schokolade im Wasserbad schmelzen und geduldig sein. Durch die Ovomaltine erscheint die Schokolade zu Beginn eher klumpig, das gibt sich aber. Danach das Ganze bei Seite stellen und etwas abk\u00fchlen lassen.<\/p>\n<p>2. Die 3 Eiweisse steif schlagen und unter die abgek\u00fchlte Schokoladenmasse r\u00fchren, bis eine glatte Masse entsteht.<\/p>\n<p>4. Den steif geschlagenen Rahm dazu geben und vorsichtig unterr\u00fchren und in kleine Sch\u00e4lchen einf\u00fcllen. Diese dann kalt stellen.<\/p>\n<p>3. Nun den Salzstangenkrokant vorbereiten: Die Salzstangen klein hacken und in etwas Butter leicht r\u00f6sten. 1 TL Puderzucker dazugeben und das Ganze karamelisieren.\u00a0 Den Krokant auf einem Teller abk\u00fchlen lassen und zum servieren auf das Mousse geben.<\/p>\n<p><strong>Fazit:<\/strong> Das Dessert ist zwar m\u00e4chtig, aber nicht zu s\u00fcss. F\u00fcr mich eine tolle Kombi zwischen salzig und s\u00fcss und der Krokant verleiht dem Dessert das gewisse Extra.
