Mit Burrata schmeckt fast alles besser, dazu die gesalzenen Pistazien und der knusprige Guanciale, ich liebe es. Dabei habe ich dieses Gericht erst vor kurzem spontan entdeckt. Im Hause Princess wurde es f\u00fcr ultra lecker befunden, weshalb diese Pasta mit Burrata nun auch auf dem Blog gelandet ist.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Nicht nur bei uns hat diese Kombination die volle Punktzahl bekommen, auch auf Instagram gab es viele Kommentare, als ich vor ein paar Wochen ein Foto davon in der Story gepostet habe. Das sind relativ grosse R\u00f6hrennudeln. Wenn man sie nicht zur Hand hat, kann man auch \u00fcberschaubare Rigatoni nehmen. Dazu mischt man die Burrata mit den gesalzenen Pistazien. Im Grosshandel findest du gesch\u00e4lte, gesalzene Pistazien bei den Ap\u00e9ro Snacks. Ich verwende gerne gleich die gesalzenen, dann muss ich nicht so viel nachw\u00fcrzen. Die Creme stelle ich im Standmixer her und gebe etwas Nudelwasser dazu, bis die gew\u00fcnschte Konsistenz erreicht ist. Eine wunderbare Pasta mit Burrata!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Was ist Guanciale?<\/h2>\n\n\n\n<p>Bei all der Cremigkeit darf etwas Herzhaftes nicht fehlen. Kennst du Guanciale? Den unger\u00e4ucherten Speck aus der Schweinebacke gibt es inzwischen auch im <a href=\"https:\/\/www.coop.ch\/de\/lebensmittel\/fleisch-fisch\/charcuterie-wurstwaren\/speck-schinkli\/speck\/sapori-guancialewuerfeli\/p\/6803938\" target=\"_blank\" rel=\"noreferrer noopener\">Grosshandel<\/a>. Noch besser: direkt beim italienischen Feinkosth\u00e4ndler kaufen. Er wird bei niedriger Temperatur in der Pfanne ausgelassen. Er besteht aus viel Fett, wird langsam angebraten und dadurch herrlich knusprig. Der Geschmack \u00e4hnelt dem von Pancetta oder Speck, ist aber anders. Es lohnt sich, beim Einkaufen nach Guanciale Ausschau zu halten.<\/p>\n\n\n\n<p>\u00dcbrigens ist das genau der Speck, mit dem eine echte italienische Carbonara zubereitet wird.
