Ich liebe Spargel Rezepte einfach. Schnell gemacht, leicht und trotzdem voller Geschmack \u2013 perfekt f\u00fcr ein unkompliziertes Abendessen oder den Ap\u00e9ro mit Freund:innen.<\/p>\n\n\n\n<!--more-->\n\n\n\n<h2 class=\"wp-block-heading\">Spargel Rezepte: die Saison beginnt<\/h2>\n\n\n\n<p>Hab ich euch schon von meiner Spargelliebe erz\u00e4hlt? Gr\u00fcner Spargel ist f\u00fcr mich definitiv das Highlight der <a href=\"https:\/\/www.bio-suisse.ch\/de\/biosuisse-erleben\/knospe-produkte\/saisonkalender.html\" target=\"_blank\" rel=\"noreferrer noopener\">Saison<\/a>. Im Gegensatz zu weissem Spargel muss er nicht gesch\u00e4lt werden \u2013 einfach die holzigen Enden weg, und schon kann\u2019s losgehen. Geschmacklich ist er etwas herzhafter, fast ein bisschen nussig, und passt dadurch super zu salzigen Toppings wie Landrauschschinken.<\/p>\n\n\n\n<p>Ich halte mich im M\u00e4rz immer zur\u00fcck, wenn der \u00dcbersee-Spargel den Supermarkt flutet. Wieso soll ich Spargel aus Mexiko kaufen, wenn es kurze Zeit sp\u00e4ter fantastisch frischen Spargel direkt aus der Region gibt? Sorry but not sorry, das kann ich einfach nicht nachvollziehen. Und siehe da, ich habe letzte Woche auf dem Wochenmarkt den ersten Schweizer Spargel entdeckt. Logisch, dass ich diesen gleich verarbeiten musste.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Weisser und gr\u00fcner Spargel: welches ist dein Favorit?<\/h2>\n\n\n\n<p>Wusstest du&#8217;s? W\u00e4hrend der weisse Spargel unter der Erde w\u00e4chst und deshalb so zart und mild im Geschmack ist, darf der gr\u00fcne Spargel an die Sonne. Deshalb ist er auch kr\u00e4ftiger im Aroma und braucht weniger Aufmerksamkeit beim Zubereiten. Ich mag beide Sorten, aber wenn\u2019s schnell gehen soll, ist der gr\u00fcne mein Favorit. Man kann ihn braten, grillieren, d\u00e4mpfen oder \u2013 wie hier \u2013 direkt auf den Flammkuchen legen. Er bleibt knackig, bringt eine sch\u00f6ne Farbe auf den Teller und passt zu fast allem: Pasta, Salat, Risotto oder eben Flammkuchen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tipp: So bleibt Spargel frisch<\/h2>\n\n\n\n<p>\u00dcbrigens: Auch beim Spargel lohnt es sich, auf Regionalit\u00e4t und Frische zu achten. Je k\u00fcrzer der Transportweg, desto besser bleibt das Aroma. Und wenn man ihn in ein feuchtes Tuch wickelt, h\u00e4lt er sich auch ein paar Tage im K\u00fchlschrank. Falls du also beim Marktbesuch nicht widerstehen konntest \u2013 kein Stress, der Spargel wartet auf seinen Einsatz.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Extratipp: Krosser Teigboden f\u00fcr Spargel Flammkuchen<\/h2>\n\n\n\n<p>Aber kommen wir zur\u00fcck auf den Spargel Flammkuchzen. Of course kannst du dir auch einen Flammkuchenteig im Supermarkt holen, aber hey, er ist wirklich sehr einfach und fix zubereitet und schmeckt &#8211; wie ich finde &#8211; echt besser. Und damit der Teig extra kross wird, hier mein Tipp zum backen: nur mit Unterhitze arbeiten. Sodass sich der Belag und die Creme Fraiche nicht komplett in Luft auf\u00f6sen, der Boden aber sch\u00f6n knusprig wird. Dazu geh\u00f6rt auch ein gut vorgeheizter Backofen samt Blech auf der untersten Schiene. Eigentlich \u00e4hnlich wie beim Pizza backen.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"850\" height=\"567\"
