Smashed Potatoes sind der Grund, warum bei mir im Sommer eigentlich immer ein Blech im Ofen steht, wenn der Grill l\u00e4uft. Sie sind die perfekte Grillbeilage. Wirklich!<\/p>\n\n\n\n<!--more-->\n\n\n\n<h2 class=\"wp-block-heading\">Was sind Smashed Potatoes?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Kleine Kartoffeln werden weich gekocht, plattgedr\u00fcckt und dann im Ofen fertig gebacken. Durch das Zerdr\u00fccken vergr\u00f6ssert sich die Oberfl\u00e4che, die R\u00e4nder werden kross, das Innere bleibt weich. Der Name kommt aus den USA, \u00absmashed\u00bb heisst schlicht zerdr\u00fcckt. Nicht zu verwechseln mit Mashed Potatoes, das ist Kartoffelstock.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Womit dr\u00fccke ich die Kartoffeln platt?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Handballen geht, ist aber heiss. Ich lasse sie kurz etwas ausdampfen oder nehme den Boden eines Trinkglases oder den Topf, in dem die Kartoffeln gekocht haben. Ein Kartoffelstampfer funktioniert auch, hinterl\u00e4sst aber Rillen, die schneller verbrennen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wichtig: nicht zu fest dr\u00fccken. Etwa auf halbe H\u00f6he, dann bleibt genug Kartoffel \u00fcbrig, die innen cremig wird. Wer sie zu Papier presst, bekommt Chips. Sie sehen simpel aus, und das sind sie auch. Aber es gibt drei Dinge, an denen sie scheitern k\u00f6nnen, und beide haben nichts mit dem Rezept zu tun, sondern mit der Kartoffel und mit Geduld. Dazu unten mehr.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Welche Kartoffeln f\u00fcr Smashed Potatoes?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Festkochend, klein, am liebsten Drillinge oder Fr\u00fchkartoffeln. Mehligkochende zerfallen beim Plattdr\u00fccken, dann hast du Stampf, keine Smashed Potatoes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Warum werden meine Smashed Potatoes nicht knusprig?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Die Kartoffeln waren zu nass.<\/strong> Nach dem Abgiessen zehn bis f\u00fcnfzehn Minuten ausdampfen lassen. Restfeuchtigkeit wird im Ofen zu Dampf, und Dampf macht weich, nicht knusprig. Das ist der wichtigste Punkt und der, den fast alle \u00fcberspringen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sie lagen zu eng auf dem Blech.<\/strong> Wenn sich die Kartoffeln ber\u00fchren, d\u00e4mpfen sie sich gegenseitig. Lieber zwei Bleche als eines voll.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Der Ofen war zu k\u00fchl.<\/strong> 220 Grad, keine 180. Bei Umluft reichen 200. Wer sich nicht traut, bekommt blasse Kartoffeln.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Was passt zu Smashed Potatoes?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Als Grillbeilage zu praktisch allem: Steak, Poulet, Halloumi, Grillgem\u00fcse. Dazu Kr\u00e4uterquark, ein Joghurt-Dip mit Zitrone oder Aioli. Wenn ich ein ganzes Grillmen\u00fc plane, kommen bei mir dazu:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>einen <a href=\"https:\/\/www.princess.ch\/blog\/salat-rezepte-ideen\/\">Salat, je nach dem worauf ich gerade Lust habe<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.princess.ch\/blog\/grillparty-getranke-ideen\/\">Drinks, die auch ohne Alkohol funktionieren<\/a> <\/li>\n\n\n\n<li>und wenn ich viele Personen bewirte, dann gibt es auch noch <a href=\"https:\/\/www.princess.ch\/blog\/%E2%80%A6\">Bl\u00e4tterteigkissen<\/a><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Und falls du die Kartoffeln gleich weiterverarbeiten willst: Genau diese Smashed Potatoes sind auch die Basis f\u00fcr meinen <a href=\"https:\/\/www.princess.ch\/blog\/knuspriger-kartoffelsalat\/\">knusprigen Kartoffelsalat<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kann man die Grillbeilage vorbereiten und aufw\u00e4rmen?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ehrlich: Knoblauchkartoffeln sind ein Last-Minute-Gericht. Vorkochen kannst du die Kartoffeln am Vortag, den Rest machst du kurz vor dem Servieren. Aufgew\u00e4rmt sind sie nie mehr gleich.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bei mir gibt es Smashed Potatoes von Mai bis September, mindestens einmal im Monat.
